Open the Health app, then tap Browse from bottom bar and head over to the Sleep category.

Now add a new sleep schedule, if you already have a sleep schedule, then you can do this by tapping full schedule option.

Now add your sleep schedule. Scroll down to Alarm Options section, now you can change the Alarm Sound and volume accordingly.

Now you can change the Alarm Volume from Clock app as well. You can do this by customizing Sleep | Wake Up from Clock app.

Change Volume!
You can also set a custom vibration for your Alarm. To do this, tap on a Alarm > Sound > Vibrations, now you can choose the vibration accordingly.
